I don’t know about you, but mealtime can be tricky between two working parents, an infant and a toddler we really had to work to find a simple way to get mealtimes done without making a huge mess or taking a lot of time to prep and clean. I love to use the crock pot during the day. I can dump the protein into the crock pot in the morning before work, and we’ve got a meal by the time everyone is ready for dinner!
Here is a simple meal that that the whole family will love! We love to have dinner together and hope you and your family will enjoy this meal too!
Ingredients:
Ground beef (you can use as much or as little as you want. I used 2lbs so we could have leftovers.)
1 jar of salsa
1 can of corn (do not drain)
Taco seasoning (or your preferred blend of spiced)
Shredded Cheese
Large wraps (burrito size)
Avocado/guacamole cups
Substitutions:
Ground beef: this would work well with any ground meat such as turkey, chicken, venison, etc. If you prefer a meatless option this would work well with chopped mushrooms, lentils, or even chopped up tofu!
Cheese/Dairy: you can skip the cheese and add more veggies like some chopped lettuce, and tomato, or even black olives, yum!
Directions:
1. Add the following to your crock pot: ground beef, salsa, corn, and seasonings. Stir ingredients well then top with an additional coat of seasoning. I set my crock pot to the low setting for 8 hours because I was going to work and that is the longest setting our crock pot has. If you are home while this cooks I would stir it periodically, and give a taste test to see if you need more seasoning. With 2lbs of meat this was the perfect consistency liquid wise. If you were to use more meat you may want to add a little water or stock/broth. If you use less meat you may like to use only half the liquid in the canned corn.
2. Place your burrito wrap on a microwave safe plate and cover with shredded cheese. Microwave on high for 30-45 seconds. THEN, add 2 scoops of the meat mixture.
3. Don't worry if they are a little wet, this will help them cook up nicely in the frying pan without burning and give the outside of the burrito a nice flavor.
4. In a large frying pan scoop out a spoon full of the crock pot liquid. Just enough to coat it.
5. Once pan is hot add in the burritos. Let the burritos cook in the liquid on medium heat for about 4 minutes, then flip. Let cook for another 4 minutes.
6. Serve with your favorite condiments! I like to use guacamole, sour cream, or hot sauce!
We served our toddler the burrito deconstructed. She got meat mixture, avocado, shredded cheese, and a small wrap. She loved it!
We love to all eat dinner together, and it is extra special when we all enjoy the same meal! I love this meal because it is so easy and tasty. We ate this meal two nights in a row, and no one was sick of it.
